Chilli Chicken - Chettinad Style

This is a simple Chilli Chicken that takes less than 30 minutes to prepare & can be made with a minimum of fuss.

And anything with a Chettinad flavour ought to be good ain't it?

Stuff you need:
  1. Chicken breasts - qty depends on how much you want to cook - all the other ingredients are based on 0.25kg of chicken.
  2. Onion - 1, medium size, sliced vertically
  3. Capsicum - 1, sliced in to squares
  4. Garlic clove - 1, sliced vertically
  5. Soya sauce - 1 tsp
  6. Ketchup - 1 tsp
  7. Rice Vinegar - 1 tsp
  8. Ginger & Garlic paste - 1tsp
  9. Black pepper powder - 1/2 tsp
  10. Coriander powder - 1 tsp
  11. Chilli powder - 1 tsp
  12. Chettinad Chicken (or) Mutton masala - 2 to 3 tsp
  13. Salt - as per taste
  14. Garlic infused Olive oil - 2 tbsp
What to do:
  • Clean and cut the chicken breasts in to small squarish pieces.

  • Add the Soya sauce, the ketchup, the Vinegar, the Ginger & Garlic paste, the black pepper & salt to taste to the chicken & let the mixture sit for 10 minutes.

  • In a pan heat the olive oil & once hot, fry the onions until golden brown on medium to high heat. Reduce the heat & add the garlic. Stir for a couple of minutes.

  • Add the chicken & fry on low-medium heat until the pieces are cooked on all sides.

  • Add the coriander powder, the chilli powder & the chettinad masala & fry until the oil separates.

  • Add the capsicum pieces & stir until the capsicum is cooked.

Serve hot with Fried Rice or Noodles!
